Quick Easy Omelette

This is probably one of my favorite breakfasts every and it is on the healthier side so unlike my other favorite breakfast, chocolate chip pancakes, I don't have to feel guilty about it. Not only is this omelette delicious but it is also so easy to make and trust me I am the person who no matter what ends up with scrambled eggs, but I have mastered this omelette and it really did take me too long to do. 

Ingredients:

- 2 eggs and 1 egg white
- 1/4 of a red pepper
- 1/4 cup of feta cheese 

- First start off by whipping the 2 eggs and 1 egg white together
- Next chop the pepper and measure out the feta cheese
- then pour the egg in to a frying pan over medium heat
- Personally I like to have my omelettes cooked all the way though so I will either flip my egg, or move it around the pan so that the liquid in the middle can touch the pan and cook
- Once thuroghly cooked I add my peppers and fetta ( you can pick other ingredients to add as well) 
- Fold the omelette over on top of the pepper and feta and let cook alittle longer
- make sure the cheese is melted and then you are ready to enjoy. 

I like to eat my eggs in the morning with strawberries or blueberries to get some sugar in my body pre-workout

My week In photos!

So the last week has been alot of fun and I decided that I would do a week in pictures kind of post and if I like it and things thenn I will continue to post them lol. Also just alittle heads up about what is going on in my life right now, I am graduating in about 3 weeks so I have finals and senior things so my next few weeks are going to be sufficiently hectic. Then right after graduation I will be getting my wisdom teeth pulled so I assume that I will be bed ridden and uncomfortable but I will try as hard as possible to keep my posts coming. After these hectic four weeks I will be having a summer free of school and hopefully I will find a summer job and then in the fall I am off to grad school so alot of big changes in my life and I am planning to carry this blog through out. So essentially I am excited and I plan on keeping up with my blog and posting regularly but there may be some weeks with only one or two posts compared to three or four on other weeks I just need to figure out my schedualing. 
 And here is my last week :)

Italian Sandwiches

This is probably one of my favorite foods ever!!! My mom only makes them on certain occassions where she needs to bring an appetizer but I really like them for a meal in general. They are just perfect and I devour them but warning probably aren't the healthiest food for you, but totally worth ignoring your calorie count for the day, and they are pretty easy to make as well. 

Ingredients: 
- 3 packages of Crescent rolls
- 1/4 pound of salami
- 1/4 pound of pepperoni
- 1/4 pound of ham
- 1/4 pound of provalone
- 1/4 cup of grated parmasean cheese
- 2 eggs 
- 2 jars of roasted red peppers

So I am going to just give a breif picture not exactly step by step but close, then I will describe alittle more how I go about makeing these. 



So how does this master peice come together you may ask? 

- Starting I lay out the first crescent roll along the bottom of a casserole dish 
- Next I add the pepperoni so that there is barely any of the crescent roll visible through the pepperoni 
- Then I add the ham laying it out flat on top of the pepperoni, If you want since ham is pretty thin if you want to buy some more ham then you can double up on it and make the sandwiches a bit more meaty
- After the ham I add my first layer of peppers just laying them out across it but I dont put them super close together just kind of evenly around so that you can do a second layer of peppers
- Now I am sure you were all thinking eggs hmm she must put them on the top like a glaze or something but no it goes in the middle, I mix the eggs so that the yolk is broken and they are all mixed up and then I mix in the parmasean cheese with the egg, I then spread it around
- Now its time to break out the second crescent roll just roll it out over top
- Finally the last meat is going on your sandwhich, so now I add the salami same way you add the pepperoni 
- on top of the salami I add the provalone cheese, which I add in the same way I do with the salami and pepperoni 
- lastly I add the rest of the peppers and cover it with the final crescent roll 
- Put the dish in the oven for about 20 min at 350 degrees, or until all the layers of crescent roll begin to look browned
and ENJOY! 

Now I know I gave you the specific order in which I put the ingredients together but you really dont have to put them in that order mix it up be crazy go for the change and let me know what combinations you like best!

Bath And Bodyworks Haul

Early this week I got an email that bath and body works was doing their two for 20 on candles as well as sending me a cupon for $10 off... So as a bath and bodyworks obsessor/addict/shopaholic I just could not help myself and well I did some online shopping. 

The frist two things that I got were the candles that were on sale for two for $20, I got Eucalyptus Spearmint which if you have seen my other bath and body works haul as well as this one clearly I am obsessed with! It is deffinitly my favorite scent from bath and bodyworks. The second scent that I got was Market peach which has been the cult product with youtube beauty gurus so I ofcourse had to check it out and in doing so I found that I love it just as much. I am currently burning this scent and they way bath and bodyworks candles fill the room is just amazing, and I really like the fruity scent that is market peach. 
Next I got one of the metal candle holders, Usually I burn my candles with out one of these but I have decided that since I am re doing my room at my parents house I wanted something to go along with the decor better and make it look less like a normal candle. 
Lastly in my favorite scent yet again I decided to try out a bath and bodyworks conditioner, now I haven't actually used this yet because I just got the shipment this morning but I am really excited to try it out and I will let you know what I think of it. If I decided that I really like this product I might go back and try out their shampoo also.

Pork For Dinner

One of my favorite meals to make for dinner is a seasoned pork roast. It is delicious and I love eating it along with my Sweet Potato Fries which you can find at that link :) This pork recipie is very simple to make and takes about 30 to 40 minutes, a huge plus I find with it though is that I can stick the pork and the fries in the oven together and dont have to check on them for a few minutes which allows you do get other things done, I like to do homework or clean up the house alittle. 

Ingredients: 
- Hatfield Pork Roast (any flavor this particular day I used italian seasoning) 
- McCormic Montreal Steak Grill Mates
- Olive Oil 

Directions: 
- Pre Heat Oven to 350 Degress
- Use a Brownie or Casserole Pan and layer the bottom olive oil 
- Take the Pork Roast out of packaging put in the pan 
- Sprinkle the grill mates on all sides of the pork roast (use sparingly because it it a very strong seasoning you dont need alot at all) 
- Put in the oven for about 30 to 40 minutes 
- use a meat thermometer to determine if it is cooked fully

7 Easy Ideas for Earth Day

 Tomrrow April 22 is Earth Day 2013 a day when we need to celebrate and be kind to our earth even more than normal because while we may call our houses our homes our true home is this earth which provides for us and allows us to do everything that we do on a daily basis. As a Biology major I am very passionate abou tht earth and its creatures I love being out side and enjoying nature so I think tomorrow is an important day to immerse in to nature and be good and kind to our earth. So today I am going to list 7 things that you can do tomorrow and every other day to be good to the earth. 

1. Plant your Garden, If you haven't done so alread tomorrow is a great day to get outside and plant your garden from flowers to vegetables to a fruit tree. Flowers are beautiful to look and and I love having a beautiful garden but besides that there is also vegetbale gardens that will provide you with fruits and vegetables for the summer which reduces your grocery expenses as well as gives you the peace of mind in knowning that what youre eating is fresh and clean and pesticide and antibiotic free. 
2. Go on a hike, visit your local nature reserve or even a local mountain that lets you relax and absorb the nature around you. I love going on hikes to feel alittle bit more at peace with myself you have time to reflect and take in the beauty of your local regions, even take a picnic lunch to really spend time and enjoy the world around you. 
3. Recycle! It is very important to recycle year round but even more important on earth day, yesterday me and eddie went and did all of our recycling instead of letting it build up or put in the trash we to it to be recycled
4. Leave your keys at home. If you are able walk to work or school do it one day isnt going to hurt, I know I live about a mile walk frmo school so I will be walking tomorrow
5. Spend your day outside. Get out as much as possible it is spring and likely a nice day tomorrow so it is good to just get outside, me and eddie will usually go to the park and through a ball around or go play basketball or even just sit out in the sun get outside and away from the computer screen. If you work take your lunch outside or spend your lunch going for a walk. 
6. Have a technology free day. .Unless youre required to be on your phone for work or need to make emergency phone calls try to keep your hands of your electronic devices. 
7. Take your workout outside. I am so excited to run along the river tomorrow I also find runs outside a bit easier but besides that you get to feel the fresh air and wind on your run rather than being in the gym and if youre not a runner go for a walk or do some exercises outdoors jump rope, push ups squats and things liek them can be done outside and dont require the gym. For people who aren't regular gym goers start your outside workouts to start your road to health. 

Everyday is a good day to enjoy nature but tomorrow is esspecially a good day to appreciate the earth and help you be healthy by gettting out and celebrating the earth.

Mini Eggplant Parmesan

So when I went to the grocery store on monday I was wandering through the fresh produce sections trying to find good zucchini to pick when I saw eggplant and I thought "hm why I have a never tried to cook with eggplant before" and So I picked my self up a baby eggplant and spent the week contemplating what i should do with it. Now eggplant parmesan is the usual that would come to mind but I wanted throw in a kick to it change up the usual and so I thought of other ways I could work with it, eventually I stumbled on the idea of making it like a bruschetta and her I am. 

Ingredients: 
- 1 baby eggplant 
- 1 Can of Diced tomatos ( I got the green pepper and onion one from Delmonte)
- 1 egg
- Kraft Fresh Take Parmesan and bread Crumbs 
- Low Fat Mozzarella Cheese

So Kraft makes these nifty things for the person who is short on time they are genius! Shake and bake your way to plenty of opportunities with these babies and there are multiple flavors. 

Directions:
- Pre heat oven to 350 degrees
- Peal the eggplant and Slice it in to decently thin slices
- Egg the Slices of Eggplant then add them to the bag provided with fresh take and shake away
- Lay the breaded slices flat on a cookie sheet
- Bake for 30 minutes
- While the Eggplant is baking prepare the tomatos, Pour them in to a small sauce pan over low heat I like to add garlic powder or dried basil but thats up to you
- Once the Eggplant are baked take them out and scoop out a few tomatos to place on each slice of eggplant sprinkle on some shredded mozzarella 
- bake for another 5 to 10 minutes

Take Me Out to The Ball Game

Yesterday I got to experience my first Yankee Game! it was so exciting and they ended up coming back to win by 1 in the eighth it was a great game. 
The reason I wanted to do a post on my experience at the Yankee game is because it can be a great date night idea or even a great trip with the family. Now maybe not to Yankee stadium but your local major or minor league game. Our tickets were only 6 dollars online and there was truely not a bad seat so even though we were up in the top section it was an amazing view and we could see everything clearly. 
So along with this post I am gonig to give you a few of my tips for a great game day with your significant other or your family. 

5 Tips for a Great Baseball game experience

1. Get there early!! we got to the stadium about an hour and a half early which was great because we had plenty of time to find our seats and get to watch some batting practice which for you kids can be alot of fun to watch them practice 
2. Now we didn't do this but if you have kids I would recomend getting bleacher seats, that way when home runs are hit your kids can have the chance to catch one, also durring batting practice they are thrown pitches to hit not to trick like in a game so durring batting practice there are alot more balls hit out to the bleacher seats and you have a better chance of catching one. 
3. If your local stadium has a museaum check it out the museaum at yankee stadium is free and was really cool they have photo ops through out lots of cool memorabilia

4. Do your research on transportation, origionally Eddie and I planned on driving but I am so glad we decided not to. Besides the fact that not driving ment that we could both have a beer, we were both pretty tired after the excitement of the last few innings and the mass of people trying to get out of those parking garages was crazy!! So we opted to take the train which for yankee stadium is perfect we were able to take the train from about 10 min from our appartment and the Hudson, Harlem, and New Haven lines all have special scheduals for game days so we got on one train and it took us right to the stadium and then right back to our local train station after. 
5. Eat before you get there!! stadium food is crazy priced I caved and bought some onion rings and they were 6 dollars for about 10 of them! However, to avoid any more caving from either of us we got subway and ate it on the train once we were about 20 min out from the stadium and it held us really well (until I saw someone else with onion rings I just couldn't resist) Same goes for buying apparel, and alcohol, visit your local sporting goods store the week before I can almost garuntee it will be cheaper. Also beer was really expensive our trick was to save up our change from the last few weeks and we went to a coin star right before we left and used our left over change as our beer money.

Chicken Pesto Pizza Bites

Tonight I decided to try something new, and one of my favorite foods to eat is chicken pesto pizza, but seeing as I have made the pizza before I was looking to do something alittle more creative with it. So after deliberation I came up with these. They are cheesy and delicous pizza bites. I did both pesto chicken bites as well as two with pasta sauce and cheese. 

Ingredients: 
- 3 flower tortillas ( I used Tostitos0 
- 3 chicken breasts grilled
- Pesto you will end up using like 5 tbsp atleast 
- Mozzarella cheese about a cup 

- If you want to make the regular pizza one you will need some type of pasta sauce 


Directions: 
- Grill Chicken with seasoning of salt and pepper, I do this on a george forman but you could do it on a regular grill also
- While the Chicken is grilling cut out the tortillas by using a large mug and cutting around it in a circle shape, if they arent perfect thats okay
- spray a muffin tin with cooking spray and place the circle tortillas in it.
- the tortillas will not fit perfectly, and will likely rip but don't worry they will still turn out okay just try to avoid the tearing of them
- Once the chicken is done cut them in to small cubes
- Combine the small cubes with pesto and mozzarella in a small bowl mixing them thuroughly
- Line the tortillas in the muffin pan with pesto a very thin layer
- Then fill the tortillas with the chicken pesto and mozzarella mix
- Sprinkle some mozzarella on top after you add the chicken
- then bake for 10 minutes at 350 degrees

If you want to use just regular sauce then I put a small layer of mozzarella on the bottom of the tortilla and then added about a tablespoon of sauce and topped it off wiht more mozzarella

Oatmeal Apple Muffins

I am and always have been a baker I love being in the kitchen its relaxing and I love creating something delicious to share with my family and friends. Now in my health persuit baking really is a difficult task and with a limited pantry I struggle even harder. So these muffins were really a trial and error for me I wanted a healthy yet great tasting food that I could bake. So this churning in my head for a few days what to make what to try and how to do it. This gem is what I came up with, and I can promise you its good because eddie ate it and he is the pickiest sweet eater ever he doesn't like cake I mean come on who doesn't like cake? So anyway I can atest to the wonderful taste of these muffins and heres how to make them!

Ingredients:
- 1 6oz container of apple cinnamon chobani
- 2 packages of Quaker Instant Apple Cinnamon Oatmeal
- 1/2 tsp. baking powder
- 1/2 tsp. vanilla extract 

  Combine all the ingredients and distribute evenly in to a cup cake pan, make sure you use the paper cupcake things the mix is very sticky so would likely stick horribly to the pan if you didn't have them i think it would be horrible to get them out of the pan. 
Bake for about 15 minutes at 350 degrees. Most important Do not remove them from the paper until they are cool! This is important becase they will fall appart if you dont let them cool and seal together. The ones that I ate this morning for breakfast came out of the paper 10 times better than the ones I ate last night so I really recomend patients here.

Review of Lush Cosmetic Warrior Face Mask

Now I wouldn't say I have bad skin and at the same time I wouldn't say I have perfect skin so for me cleaning my face and using face masks is essentially to keep my face healthy help prevent minor break outs and prevent black heads. The one area that I do see trouble with my face is the area around my nose commonly had black heads and in my mind big pores. 
I have now used the cosmetic warrior face mask from Lush twice, and as it is supposed to I have found that it decreases the number of break outs and black heads that i have. As well as that I have found that it decreases the amoung of redness on my face and makes my skin very soft and smooth. In the last two weeks that I have been using it eddie has commented on the softness of my skin atleast three times. 
The one thing about this product that I have trouble with is its smell, it really doesn't smell that great and I know Lush has a few better smelling masks which I may try next time ( I know quite superficial of me but I like to smell happy things when I am treating myself). 

Application and Step by step feelings: 
I like to have a damp face to apply I usually apply right out of my bath, but wetting your face with a washcloth would work just as well. 
Apply a generous amount to your face avoiding eyes and mouth, now it does have peices in it which feel weird at first but you get used to them. 
Let it sit for about 10 minutes without it getting completely hard, youll start to feel it hardening but according to Lush you dont want the mask to completely harden. 
After the 10 min or so, take of the mask with hot water. 
After taking the mask off my face just feels cleaner, and smoother and the feeling after taking the mask off is probably the biggest reason I have for wanting to re purchase the Cosmetic Warrior.

Brown Rice Chicken Stir Fry

Now going on with my healthy food kick I made stir fry with brown rice and vegetables. This is probably one of my favorite meals right now to make, its very simple, doesn't take much time, and is delicious. I also will make enough so that me and eddie will get more than one meal out of it (which by the way it taste pretty good cold too so I was able to take the left overs to eat for lunch the next day) 

What you'll Need: 
- 2 cups of rice
- 1 medium zucchini
- half a red pepper
- one medium onion 
- about a quater cup of teriyaki or stir fry sauce 
- 3 peices of chicken 

First grill the chicken I used my george forman but you can use a normal grill, while grilling the chicken start making the rice as instructed on the box, also chop up the zucchini onion and pepper for the peppers I like to cut them in to cubes and I use thin slices of zucchini becaus they cook quicker when they are thinner, then the onions I chopped into alittle smaller than the pepper (or should I say Eddie chopped because lets be honest I can not chop and onion with out crying and when I say crying I don't mean a few tears but a hysterical cry. I really hope I'm not the only one). 
I then put the vegetables in to a frying pan on meadium heat with some olive oil, I cover it with a lid to let it seam and leave it alone for about 3-5min after that I check it periodically stiring around the vegetables until they are all cooked thuroughly. 
Once the vegetables are all cooked I add the chicken and the Teriyaki sauce and let it simmer for another few minutes. I also add a little bit of teriyaki to the rice. 
Then mix together the rice and the Vegetables and Chicken in a large bowl and serve, I usually will take about half out before I serve and put it in to a tupperware container so that I already have that out and saved  to put in the refrigerator for the next day.

A day of Healthy Eating

For the past few weeks I have really been trying to eat healtheir and consistantly healthy throught out the day , yesterday I had a particularly good day of eating (probably because I was at school from 8:30 to 6:30 which doesn't leave much room for snacking) so I decided that I would go through what I ate. I came up with this idea because I was thinking about what snacks to bring for my day and I really struggled, so in this struggle I thought there must be other people who experience the same feeling. So here I am to give some of my snacks and meal ideas to those who are contemplating what should I eat today? 

Breakfast
8:00 AM
- 1 whole egg and 2 egg whites scrambled with some pepper
- 3 large strawberries 

Mid Morning Meal
10:00 AM
- Pear Chobani
and alittle abnormal psychology 

Lunch
12:00 PM 
- Spinach Leaves, half a cucumber, about a handful of low fat feta cheese, and low fat italian dressing

Afternoon Snack
2:30 PM 
now you may question my palette on this one
- Peanut Butter and Carrots 
I use JIF because they come in nifty little packs :) but I understand people may not be fans of peanut butter and carrots so if you want replace with your favorite carrot dipping condiment, or go just plain carrots which I do some days. 

Dinner
6:30 
- Stir fry with Chicken, Brown Rice, Zucchini, Red Peppers, and Teriyaki Sauce

Pesto Caprese Chicken

Lately I have been trying to eat healthier (the struggle... I want to bake something chocolatey). I am not trying to crash diet or anything because that is horrible for your body, but me and eddie are trying to incorporate more vegetables and a healthier lifestyle. So one of the new recipies I decided to try is this Pesto  Caprese Chicken. 
What you'll need: 
- 2 medium to large Chicken breasts
- about 2 tbls. of Pesto 
- 2 medium tomatos 
- Mozzarella Cheese  
- Salt and Pepper to taste
- Grill/ George Forman
Instructions: 
- Turn on George Forman to 350 degrees and preheat oven to 350 degrees 
- Add salt and pepper to the chicken to personal taste then place on the George Forman and Cook for about 10 minutes or until cooked thuroughly ( may take less time depends on chicken thickness ) 
- While chicken is grilling slice the tomatos in topretty thin slices
- Once chicken is done spread about a table spoon of pesto on each peice of chicken
- Next add the slices of tomatos on the pesto
- Finish by adding mozzarella to the tomato later for this add as much as you like I know eddie likes his very cheesy so I added more for him

- Now place them in a casserole dish or on a baking sheet and place in the oven 
- Bake for about 10 min or until the mozzarella is well melted 
- durring this time I made some chopped spinach or you could be making another vegetable or some whole wheat pasta
This was delicioius and the perfect size dinner for me tonight, eddie had a few chips because he wasn't quite full but next time were going to make some whole wheat pasta to go along with it.

My Favorite Spring and Summer Nail Polishes

As spring is approaching one of my favorite things to do is brighten up my nail polish and go from the darker colors to so bright pinks and colorful nail polish. For this reason I am going to share with you a few of my favorite spring colors that are in my nail polish collection 
So starting with my pinki is the first color on the left of the first picture (hopefully that makes sense...) So on my pinki is Essie Your Hut of Mine which is a really great shimmery rose color in between and coral and a red I guess I would say. Next on my ring finger is a purple lilac color from Essie which I dont have the exact color name for unfortunatly I have had the color for awhile and beyond just my spring and summer favorites it is definitly one of my all time favorites. On my middle finger is a mint green from Essie called Turquoise and caicos this is another one of my all time favorites. My pointer finger has a light baby blue from NYC called Cashmere and Creme this brand is one of my favorites for inexpensive nail polishes I generally always find a color I like.Lastly is my thumb which is a bright pink from Nars called Schiap this is actually the color I am wearing right now (Even though I really considered keeping this every nail a different color thing, unfortunatly I am not that bold) 
These last two colors are my most recent purchases of nail polish on the left is Sally Hansen Coral Reef which I have been wearing non stop!! (except for right now) and on the right is a metalic blue/teal from Sephora by Opi called Mermaid to Order, this color I really love for going out at night because its metalic and when I go out I tend to wear basic color so this and really all of these colors really add something to my outfits.

Sweet Potato Fries Yum!

This week as spring is approacing and I am trying to get in better shape for summer I have decided to make some big changes to my diet, as someone who works out regularly my diet is where I struggle. I generally lived a college diet and go out with my friends and eat some pretty crummy food. So this week I have really been working on healthy eating. So on this track I decided to try to see if I could make myself some sweet potato fries. To my suprise they actually turned out pretty good!!
To start off my venture I first peeled my sweet potato so for anyone who has never done this before it is not as easy as peeling a potato let me just tell you that know. I'm sure it gets easier with practice but I deffinatly struggled so make sure you have a good knife to work with. 
Once the potato was peeled I decided to slice mine in half becuase it was pretty big and I didnt want crazy long fries as well as it being very difficult to cut. After this I cut it in to slices and strips of potato about a cm wide and a cm thick. I have always prefered shoe stringy like fries and while they all did not turn out that thin I tried, So if you prefer wedges or steak fries go for it this way just seemed the easiest for me to cut. So once I did this I put them all in a strainer and ran some water over them just to make sure they are washed and I have read that doing this will remove some of the starch from the potatos. Also after you do this make sure you dry them with a paper towel really well 
Once I dried the potatos I transfered them to a small bowl 
To the bowl I added olive oil about 3 tbsp, Some salt and pepper to your individual liking and alittle less than a hand full of bread crumbs. This process would be best if you had a plastic back to shake it all up in however I lacked that unfortunatly so if you are in the same boat as me just make sure that you coat all of the fries pretty evenly. 
Pre baking photo! So I put the oven on to 400 and baked them for 40 minutes. Now as you can see I made some regular potato fries for eddie since he is not a fan of sweet potatoes and they are on the left. And yes I made a ton! I am eating the left overs at the moment actually and they are just as delicious :)
